Vijranand Kalloa comes from the farming universe of Mauritius’ western coast. Just like many youngsters at that time, he goes on to discover a new world by joining the hotel trade industry. On the advices of his relatives, he quickly learns how to cook in the hotel Saint Géran and takes part in many exhibitions in Mauritius and abroad. He quickly climbs up the echelons and continues his training within Sun Resort group’s training Academy. He has now become Head Chef for all of the restaurants at hotel Ambre, the new 4 stars hotel of Mauritius’ west coast.
It is with hardly masked delight that he shares his knowledge of Mauritian cuisine with Ambre’s clientele. He has always known how to create innovative recipes and deals a lot of care to introduce his island through typical and inspiring dishes. He feels that “when customers come to our hotels, they wish to enjoy what Mauritius has to offer them in terms of food, savours and colours…”. Chef Kallooa also takes part in the conception of State banquets and official dinners during official visits in Mauritius. Driven by his passion for transmission, he appeared evident as a renowned tutor amongst many young Chefs that owe him a lot. Chef Kallooa is the founder and director of the Mauritius Chefs Association and he is regularly invited as a consultant and jury member for prestigious international culinary competitions.
