Delight your friends with a tasty lamb dinner from Mauritius

The 4 star Ambre resort in Mauritius invites you to try this recipe for lamb medallions with a pistachio crust , tender vegetables, garlic and polenta created by Chef Vijranand Kallooa the Head Chef of the 4 star Ambre resort in Mauritius. Chef Kallooa presides over the three top restaurants at the Ambre which offer many types of cuisine . With over twenty years of experience, this Head Chef is passionate about food and is delighted to invite you to discover one of his delicious recipes featuring lamb. This is his famous lamb medallions dish, which you can now enjoy in the comfort of your own home

Prepare a recipe from the Ambre at home

Simple and impressive, this dish is perfect for a dinner party with your friends. To make Chef Kallooa’s recipe you will need these ingredients :

  • 400g lamb per person, in medallions
  • 400g polenta
  • 100g carrot
  • 100g of pepper
  • 75g cherry tomatoes
  • 75g pumpkin
  • 200g Bok choi (Chinese cabbage)
  • 40g breadcrumbs
  • 40g pistachios
  • 50g peas
  • 50g broccoli
  • 75g of Brussels sprouts
  • Dijon mustard
  • To season - Basil leaves, rosemary , thyme, parsley, garlic, salt and pepper

Clean and debone the lamb medallions. Clean the bones and set aside. Rest the lamb in the olive oil and let it sit for several hours in the fridge. Remove from the oil and spread Dijon mustard over the lamb and sprinkle with pistachios and breadcrumbs. Set aside.

Sauté the vegetables in olive oil. Place the lamb medallions (3 or 4 per person) on the polenta on a plate and garnish with the rosemary. You can also decorate with the cleaned bones (see photo).
