The entire team of chefs from the 4-star Hôtel Ambre in Mauritius showed their expertise in the cookery competitions organised at the HotelWorld 2013 trade fair !
We recently mentioned the standards achieved by the team of chefs at the new Hôtel Ambre in Mauritius during the HotelWorld 2013 trade fair. This unbeatable meeting of hoteliers and caterers from Mauritius and neighbouring islands was held from 15th to 17th May 2013 at the Centre Swami Vivekananda in Pailles. The team of chefs and sous-chefs at the 4-star Hôtel Ambre really stood apart from their competitors on several occasions in the different cookery competitions organised during the trade fair. But the one who really shone was the sous-chef Vikash Deelah, who brought back the gold medal in the canapé competition !
In fact, at the cookery competition, the talented sous-chef from the resort in Mauritius was up against the Hôtel Belle Mare Plage and was rewarded for the quality of his creations and his presentation skills in the canapé competition. Let us take a mouth-watering look at some of the enticing canapés for which the sous-chef, Deelah, won his gold medal.
In the “Vegetarian” category :
Confited spears of cucumber and avocado pear sprinkled with coconut.
In the “Fish” category :
Tartare of yellow-tailed red tuna with combava zest and olive oil accompanied by grilled crostini.
In the “Chicken” category :
Breast of chicken with tandoori spices and croûtons of chopped green papaya.
